For a fast meal, you can't go wrong with this salad/sandwich. Eat it straight up or put it between two slices of toasted bread. It's full of fiber, protein, iron and a host of vitamins! And it takes less than 10 minutes to put together. Plus, it's sooo good!
Amazing Chickpea Salad (Sandwich)
(adapted from Thug Kitchen)
1 can chickpeas, drained and rinsed
1/2 avocado (can substitute 1 TB. mayo but you won't get the same nutritional punch)
Juice of 1/2 lemon
1 stalk celery, chopped
Chopped fresh or dried dill, to taste (optional)
Sriracha, to taste (optional)
1/2 tsp. salt
Pepper, to taste
If making a sandwich:
Mustard, lettuce, tomato, cheese, egg, onion or whatever else you like on sandwiches
This is an easy recipe to double!
In a medium-sized bowl, add chickpeas, avocado and lemon juice. Mash until you get the consistency you like (small chunks are fine). Gently mix in celery, dill and Sriracha (if using), salt and pepper. Taste and adjust seasonings. That's it. Enjoy!
